No Bake Cookies

What you need: 

1/2 cup soy milk
2 cups sugar
1/2 cup margarine (Earth Balance, mmm)
3 tablespoon cocoa
1/2 cup peanut butter
3 cups oats
1 cup nuts (optional)
1/2 teaspoon vanilla
1/2 teaspoon salt

What you do: 

Mix the vegan sugar, margarine, cocoa, and soymilk in a large saucepan. Boil for a couple of minutes, stirring constantly.
Remove from heat, and add peanut butter. Stir until nicely blended. Add oats, nuts, vanilla, and salt. Put into square pan and chill.
Cut into squares, and form into balls.
These are really really good and taste just like the original.

SO HOW'D IT GO?

These are very sweet. I used carob powder instead of cocoa, and it really gave these a unique and yummy taste. Great recipe!
