No Sugar Coco-Nut Balls

What you need: 

1 cup semi-sweet vegan chocolate chips
1/4 cup nondairy milk (I use almond milk)
1/4 cup quick-cooking rolled oats
3 tablespoons nut butter (I use peanut butter)
1/2 banana, mashed
1 cup shredded unsweetened coconut

What you do: 

Method
1. To a small pot over medium heat, add the chocolate chips, milk, oats, nut butter, and banana; heat, stirring occasionally, for 5 to 7 minutes, or until mixture has melted.
2. Cover a large plate with parchment paper. Shape dough into 1/2 tablespoon portions and place on parchment paper (you will end up with 12 to 14 balls). Let cool for 10 minutes.
3. Fill a bowl with 1 cup shredded coconut.
4. Place the dough portions, one by one, into the coconut (they should still be fairly soft). Roll into a ball and repeat until the ball seems pretty solid. Place back on the plate to cool. Repeat with remaining dough. Pretty easy huh?!?
