No White Flour, Sugar But Lots Of Goodness Zucchini Coconut Bread

What you need: 

2 onions finely chopped
4 tablespoons olive oil
garlic, crushed to taste (I use quite allot! We Love Garlic!!)
1/2 tablespoon cumin seeds (I use ground cumin)
1 tablespoon ground coriander
1 tablespoon fresh ginger grated (I use more!)
2 pounds zucchini diced (about 2 1/2 cups)
3/4 cup chopped almonds (replace with your favorite nuts)
3/4 cup chopped walnuts
3/4 cup oatmeal
1/3 cup coconut milk
1/2 cup dried flaked coconut
1 tablespoon salt
pepper to taste

What you do: 

Preheat oven 400F/250C.
Saute onions in 3 tablespoons of the oil until translucent. Add garlic, cumin, coriander and ginger. Cook for 30 more seconds. Stir well.
In separate pan, cook zucchini in rest of oil until just brown. Combine all ingredients together. Mix well. Press mixture into oiled pan. Bake 30ish minutes.
This recipe can easily be transformed with different ingredients. My fiancée and I do not eat any processed flours or sugars so breads are a little difficult sometimes!!
Use your favorite nuts in place of almonds or Walnuts. Just cut them into small sizes.

SO HOW'D IT GO?

A great idea for flour-less/sugar-less bread!  I added diced banana peppers to the mix to give it a little kick.

My only complaint is that I wouldn't necessarily call this bread; it's more of a loaf.  I find myself wanting to eat it with a fork and knife.

I messed this recipe up. Everyone keep in mind that oatmeal does not just mean oats like for some reason my brain interpreted. I'll have to give it a try with the proper ingredients though.

This was great! I added dried cranberries instead of nuts, but I totally recommend this!  ;D
