Northern Fried Eggplant

What you need: 

1 cup flour
1 tablespoon seasoned salt
1 tablespoon garlic salt
1 tablespoon onion salt
pepper, to taste
1 large eggplant, sliced
tomato sauce, to serve
vegan mozzarella, to serve

What you do: 

1. Preheat oven to 350 degrees F. Combine flour, seasoned salt, garlic salt, onion salt and pepper in a bowl.
2. Dip eggplant in water in a separate bowl. After letting the excess water drip off, dip the eggplant slices in the spice mixture.
3. Place on a cookie sheet and bake 20 minutes, or until golden brown.
4. Take out of the oven and spoon tomato sauce over the top and sprinkle with vegan mozzarella. Place back in the oven for another 6 to7 minutes.
It tastes great with spagetti or lasagna.
