Norwegian Lefse

What you need: 

5 cup hot mashed potatoes
1 teaspoon sugar
1 teaspoon salt
4 tablespoon shortening
2 cup flour

What you do: 

Mix ingredients except flour while mashed potatoes are hot. Let cool. Add flour and mix until you have stiff dough. Pinch off portions the size of an egg. Roll paper-thin on pastry cloth, using as little flour as possible. Bake in electric fry pan or griddle until top is light brown. Turn over. Remove and stack between paper towels. To serve, spread with margarine and vegan sugar.

I miss lefse soooo much!  We would always eat it with cranberry relish :)
