Nutritional Yeast Queso Sauce

What you need: 

1/4 cup nutritional yeast
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
dash garlic powder
1 cup water
2 tablespoons margarine
1 1/2 cups salsa or 1 (10 ounce) can diced tomatoes and peppers
tortilla chips, to serve

What you do: 

1. In a saucepan combine dry ingredients (nutritional yeast, flour, paprika, salt, and garlic powder).
2. Whisk in water. Continue to whisk constantly over medium heat until mixture is thick and bubbly. Remove from heat.
3. Stir in margarine until melted, then stir in salsa. Return to low heat and cook just long enough for salsa to heat.
4. Pour over chips and eat like nachos or use as a dip.
Remember to always whisk it!
Source of recipe: I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches.

SO HOW'D IT GO?

Conversation my omni husband and I had over text while I had at work

Him: What is this in the fridge (I had made the queso)
Me: Why do you ask?
Him: It smelled good so I had it with chips. What is supposed to be?
Me: What do you think it is?
Him: Well it tastes kinda like queso.

Oh goodness. So good. I have made this once before. I adjusted by adding about a teaspoon of mustard, cumin (for that true queso flavor), and coconut oil. Marvelous. And tumeric for color and it seems to just bring out nutritional yeast (don't know why), and I don't add the tomatoes. but also great with them. Plan to make this again without the cumin, and put it it a mold and see if it will set up so I can slice for sandwiches. Thanks so much.

WOW! This is fantastic! At first I was a little hesitant to try but I'm very glad that I did. I used it with tonight's meal over steamed cauliflower. My mom, a non veg*n also enjoyed it. I'll be keeping this in my normal rotation. Definitely, nacho worthy too.

This is AWESOME!!!!I was a little leery of this recipe, we've been vegan for almost 2 years, but I'm just now trying out nutritional yeast.  I made this a couple nights ago and the BF and I were amazed at how cheesy it tastes. Either this is the cheesiest uncheese sauce ever or I've just forgotten what cheese tasted like (either way it was fabulous)! I will be making this recipe over and over again!

Unbelievable! I am new to veganism and have had my withdrawals as a pregnant mama on this journey....this sauce is delicious!  I am eating right now with on a taco salad...

This is a fantastic recipe.  It tastes very good.  I add a dash of cumin to it and I love it.  Thanks so much for the recipe.  ;)b

I added 2 tbsp of Pace mild taco sauce and 2 tbsp of Old El Paso taco seasoning.  It tasted alright after those additions,  ;)b but I'm gonna have to try the Red Star yeast... b/c stuff I've made with my nutritional yeast always tastes funky.  :P
