Nutritional Yeast Queso Sauce

What you need: 

1/4 cup nutritional yeast
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
dash garlic powder
1 cup water
2 tablespoons margarine
1 1/2 cups salsa or 1 (10 ounce) can diced tomatoes and peppers
tortilla chips, to serve

What you do: 

1. In a saucepan combine dry ingredients (nutritional yeast, flour, paprika, salt, and garlic powder).
2. Whisk in water. Continue to whisk constantly over medium heat until mixture is thick and bubbly. Remove from heat.
3. Stir in margarine until melted, then stir in salsa. Return to low heat and cook just long enough for salsa to heat.
4. Pour over chips and eat like nachos or use as a dip.
Remember to always whisk it!
Source of recipe: I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches.

SO HOW'D IT GO?

I thought this was delicious, i added a little mustard and hot sauce. then topped my chips with black beans and avocado!!! yum

I am stunned.

This is every bit as good as the canned processed cheese you can buy for nacho chips. 

I used whole wheat flour.  This worked just fine but turned the sauce a little darker.  Also, canola oil works just fine, and you can cut the oil in half if you want.

Will be making this....

a lot.

Delicious! I think next time I might skip the salsa (I used 365 brand chipotle) and add some extra spices like cumin instead. It was fantastic, but I prefer my queso as bright yellow as possible and the salsa, of course, makes it quite red. (I tried to up the yellow with turmeric, which was a mistake--noone ever talks about the taste of turmeric but I found it very pronounced despite not using that much)

To add to the uses, I halved the recipe, used part in a taco salad, and the rest over a tofu scramble the next morning (like l2as recipe with a Mexican flair)

I didn't have any salsa or a can of diced tomatoes and peppers so I used a can of plain ol tomato sauce and it came out alright. I added a can of kidney beans, some cayenne and chili powder because I found it pretty bland. I still ate the whole thing though. I will def. try this again with some salsa.

Believe the hype - this recipe is awesome.  It has all the gooey goodness and mouthfeel of processed cheese spread.  I slipped the tomatoes and put it in a bowl and surrounded it with blue corn chips for a yummy snack dish.

i was so inspired by this just now that i ran out to buy the canned tomato/jalapenos. suffice to say, i am absolutely delighted that i did because this recipe was amazing. it is mindboggling how similar this tastes to that crappy, fake cheese fatty glop but without the fat and considerably healthier. i think next time i will doctor this up by adding some chopped serrano peppers and more jalepenos for more spice.

Holy queso, Batman! My mother came home with a pound of bulk nutritional yeast and I was looking for a non-disgusting way to use it. I made this with a little more salsa, about 2tbsp of garlic, and a can of Rosarita brand veg. beans and I seriously flipped out! This tastes just like cheese! I don't know what brand the yeast was, and I was convinced it would never taste like real cheese,  but this blew me away. This was made for my friend's birthday party, but I'm tempted to eat it all myself. Even the veg-hating mommy was surprised at how good it was.

It looks a bit like pimento sauce, which I hate, but the taste more than makes up for it!

This was AMAZING. I tried another queso sauce from vegweb but it just didn't taste good/right. It was adequate. But this one is superlative--amazing! The only thing I changed was I added my salsa bit by bit to taste...probably ended up using about 1/2-3/4 C. Now I ate too much. But it was worth it.

pretty good.  i kept having to add a little of this or that because the flavor wasn't quite there for me.  although it was nice, it wasn't overwhelmingly yeasty tasting
