Oatmeal Bread to Live For

What you need: 

1 1/4 cups hot water
2 teaspoons canola oil
1 tablespoon brown sugar
1 cup oatmeal
2 to 2 1/4 cups whole wheat flour
1 1/4 teaspoons yeast
1 teaspoon sea salt
1 tablespoon vital wheat gluten
1 tablespoon sunflower seeds

What you do: 

1. Put water, oil and vegan sugar in the bread machine. Add the oatmeal and let it sit for 5 minutes.
2. Add 2 cups flour. Make a well in the middle of the flour for the yeast, add yeast, and carefully add the salt around the edges. Add vital wheat gluten.
3. Turn on the bread machine. (Use a setting for 1 1/2 pound loaf; dark if you have it.) If the dough seems too sticky, add additional flour as required. When you have a nice dough going, add the sunflower seeds.
This is a sturdy loaf, very nourishing. Great with salads, soups, as sandwiches or toasted with jam. In the winter, spring, summer, fall.'

SO HOW'D IT GO?

I'm just throwing my 1st batch of this loaf together as we speak, but wanted to note that I've read to premix the flour and vital gluten to avoid lumps in the bread.  Can't wait to taste this...sounds yummy!!

I had to use white bread machine flour because I was out of whole wheat and it still turned out really good. Next time I am trying the molasses.
