Oatmeal Pumpkin Cranberry Breakfast Bars

What you need: 

1 15 oz. can pumpkin
2-3 cups instant oatmeal
3/4 cup chopped nuts or seeds
1/4 cup apple sauce
2 tablespoons flax seed meal
1 1/4 cup chopped dried cranberries
1/2 cup maple syrup (or to taste)
3/4 tablespoons cinnamon
1/2 teaspoon (or less/to taste) of each: allspice, clove, nutmeg

What you do: 

Preheat oven to 350 Fahrenheit.
Mix everything in a large bowl, adding the oatmeal last (to see if you will need more depending on the thickness of the dough). This should be very sticky & thick dough! Place on a sprayed cookiesheet in a rectangular shape- this makes for easier cutting/shaping. Bake in oven for about 20 minutes. Let cool before cutting with sharp knife or pizza roller.
Note: I have used walnuts, which taste great, but sunflower seeds or macadamia nuts would go well too. This recipe is pretty adaptable- and eliminates the need for bananas as a binder! Adding a little more/less of anything in here wont hurt the recipe- get creative!
