Open Faced Chanterelle, Onion and Peppers Hoagie
3 cups sliced chanterelle mushrooms
1 green pepper
1 yellow pepper
1 small onion
1 package vegetarian gravy (like Hain Pure Food) (or 2 cups prepared vegan gravy)
Fresh ground pepper, to taste
Sea salt, to taste
2 to 3 Hoagie buns or hard rolls
1) Slice up your mushrooms and vegetables. Saute mushrooms in olive oil for 3 minutes. Add peppers and onion and saute for 3 to 4 minutes more. Add salt and pepper.
2) Make gravy then add your gravy to your mushroom mixture and stir. Only add enough to coat, not drench. Toast your bun and then top with mixture. Add more pepper if you like.
Source of recipe: Popped into my head today, I needed to use up a bunch of channies. Very delicious, I would have liked to added some sort of 'cheese' but didn't have any.
