Orange Date Scones

What you need: 

1 cup unbleached white flour
1/2 cup whole wheat pastry flour
1/4 cup sucanant
1/4 teaspoon salt
1 tablespoon non-aluminum baking powder
3 tablespoon soy margarine
1/3 cup dates, snipped into small pieces
1/3 cup walnut pieces
1/4 teaspoon orange extract
1/2 cup soy milk

What you do: 

Mix all dry ingredients throughly, including dates and walnuts. Melt soy margarine and pour into dry mix along with the soy milk and orange extract. Mix with spoon until liquid is absorbed. Then, using your hands, mix dough until it is uniform. If dough is too stiff, mix in a touch more soy milk. Take 1/6 of dough and roll into a ball, place on cookie sheet and flatten top somewhat. Repeat to make six scones. Cook in a preheated 425 degree oven for about twelve minutes until scones are slightly browned at edges.

SO HOW'D IT GO?

Excellent recipe.  I've been trying to duplicate the wonderful scones from our local health food store's bakery for years, and these are pretty much it.  I didn't have dates so I used dried cranberries like the local folks do, and I didn't have walnuts so I broke up a handful of almonds instead.  Other than that, I followed the recipe exactly, including the cooking time.  They came out lightly browned on the bottom (I used one of those double-layered cookie sheets) and moist and crumbly all through.  Almost biscuit-like in texture, and delicious.  I have a feeling I'm going to be making a lot more of these...  Great recipe - thanks!  ;)b

I changed these considerably based on what I had on hand, and they came out great! I had to use all white flour and sugar, and I added 1/4 c. quick oats; I omitted the orange flavoring and replaced the dates and walnuts with a scant cup of fresh blackberries. The dough was extremely soft and I barely worked it at all, and they came out very tender. 12 minutes was just a bit too long in my oven on a shiny cookie sheet, the bottoms burnt just a little bit, 10 minutes would have been perfect.
