Orange & Spice Sandwich Cookies

What you need: 

1 cup all-purpose flour
3/4 teaspoon baking soda
3/8 teaspoon sea salt, divided - 1/4 teaspoon cookie; 1/8 teaspoon filling
1/2 cup canola oil or similar light colored oil
1/2 cup agave syrup or similar light colored syrup
1/3 cup apple syrup or molasses
1 teaspoon vanilla extract, divided - 1/2 teaspoon cookie; 1/2 teaspoon filling
1 - 2 teaspoon ground ginger
1/4 - 1/2 teaspoon cayenne pepper
1/4 cup reduced calorie vegan margarine
1/2 teaspoon orange extract
2 tablespoons cocoa powder
1/8 cup cold water
2 cups powdered sugar

What you do: 

Preheat oven to 300-F degrees (150-C). Mix the dry ingredients – set aside. Mix the wet ingredients separately. Blend everything together. The batter will be a little thinner than classic cookie dough. Spoon out teaspoons of dough, about 2 inches apart onto silicone baking sheets. The dough will spread so give it room to move. Bake 15-18 minutes. Meanwhile, prepare filling.
Filling: Mix margarine, water, vanilla, cocoa, and half of the powdered sugar with a mixer for 5-10 minutes. Add the rest of the powdered sugar and beat just enough to mix in.
When you remove the cookies from the oven, they will be a bit flimsy so cool completely. When cooled, spoon a small amount of filling onto the bottom side of a cookie and sandwich together with another cookie.

SO HOW'D IT GO?

I'm making these now and I'm not too sure about them. okay, so I'm not sure if wafers are the intended result but it is a REALLY wet dough- it's batter, actually... O_o the wafers taste good but i can't really see a cookie sandwich with these. i added some extra flour to the second half of the batter so I'll see if that helps.
