Pam's Prime Banana Muffins

What you need: 

1 3/4 cups flour (whole wheat,oatmeal,mix,your fav.We even use bulk pancake and waffle mix.Its our fav.,but not.)
2 1/2 tsp.baking powder (If using pancake mix,no need for this)
1/2 teaspoon sea salt (or not)
1 dash cinnamon
2/3 cup sugar
1 teaspoon vanilla
1 teaspoon banana extract
1/3 cup applesauce
1 egg equivelent
4 seriously ripe bananas
1 good handful of carob chips (or more)
nuts of your choice (optional)

What you do: 

Mix dry ingredients in a large bowl. In another bowl, mix wet ingredients (including bananas). Combine wet and dry ingredients. Add carob chips and whatever else you want. Pour into greased (we use Pam) muffin tins. Fill them to the top. These will be fairly large. Bake them about 20 minutes or until they look done. We knew that these were okay when our friend Prime ate about 12 of the 2 dozen we made one evening.

WOW. These are hella good!!!!!!! :) I immediately ate like, 3 of them. :P I added two tbs of vanilla soymilk like the other comments suggested, used 5 very very mucho ripe bananas and put some cinnamon and sugar on top. :)

Great recipe! These muffins are SCRUMPTIOUS! Best muffin recipe I have found on this web-site!

I just kept the egg-replacer out and added a bit more banana. I didn't have any banana extract, so I just left it out. I didn't put carob chips in, but I did throw in some chopped walnut.

Sorry the picture is not-so-great...I have a camera-phone doing the task.

I have a batch of these in the oven right now, after tasting the batter I'm sure they're going to be awesome.  I made a few changes and substitutions based on what I had in the kitchen and because I have problems with following directions.. I halved the recipe, used oat bran pancake mix for the flour, skipped the egg replacer and banana extract and just added a little extra applesauce, threw in a handful of shelled pumpkin seeds for the nuts, added a dash of nutmeg with the cinnamon, and used about 3/4 cup of fresh blueberries instead of carob chips.  Can't wait until they're done!

these were superrrr good! i didn't have applesauce so i just used some oil, and i used whole wheat flour. they're a bit more on the side of cupcakes than muffins, they're super dense. reallly good thank you

YUMMY.  I also didn't use banana extract but added vanilla soy milk and topped with sugar and cinnamon (as previous reviewers suggested).  My lacto ovo kids kept coming back for more and my husband (who doesn't even like carob chips!!) said they were excellent.  :D

These muffins are pretty good, but probably won't replace my current banana bread recipe (also from this site). I used a banana nut pancake mix for the flour, etc, mix. I also used chocolate chips instead of carob. They were good, but a little rubbery, and I would add an extra banana. Overall a tasty muffin though.
