3 cloves garlic, sliced
4 tablespoons olive oil
2 sweet red bell peppers, sliced
2 sweet yellow bell peppers, sliced
4 tablespoons balsamic vinegar
1. Heat oil in a large skillet and sauté garlic until it just starts to color.
2. Add pepper strips and sauté until the skin of a few starts to blacken in spots.
3. Add balsamic vinegar and continue to cook until peppers are soft and done.
Good hot or cold; I like the cold peppers in wholegrain bread as a sandwich. You can add a sliced onion to the garlic sauté if you like.
