Pancakes With Stevia (Without Sugar)
1 1/2 cups unbleached flour
1/2 teaspoon sea salt
3 teaspoons baking powder
1 teaspoon stevia
1 ripe banana, smashed
3 1/4 tablespoons vegan margarine, melted
1 cup nondairy milk (I use Silk coconut milk)
vegetable oil, as needed
1. In a mixing bowl, sift the flour, salt, baking powder, and stevia together. Make a well in the center of the bowl and add the banana, melted margarine, and milk; mix in the dry ingredients.
2. Lightly grease a frying pan with vegetable oil, and then warm it up over medium heat (I pour about 2 tablespoons vegetable oil into the pan, and then evenly spread the oil with a paper towel).
3. Pour batter onto the pan, and cook the pancakes until they are brown on both sides.
