Pasta with Arugula
5 ounces linguini (I use whole wheat)
2 to 3 ounces arugula
2 small tomatoes, diced
2 to 3 cloves garlic
2 tablespoons olive oil
Roasted pine nuts or walnuts
1 ounce vegan Parmesan
Sea salt & ground black pepper
1) In a larger skilled heat the oil on medium high. Add the garlic and saute until fragrant, about 2 minutes. Add the arugula and toss until the leaves are half wilted, to 2 minutes. Add to the pan the cooked warm pasta and tomatoes and mix, about 1 to 2 minute.
2) Serve in large bowls. Top with roasted nuts and vegan cheese. Sprinkle with sea salt and ground pepper. My husband likes to sprinkle with hot pepper flakes.
This tastes like something you'd be served in a fine restaurant. Perfect for guests as it is so easy to make and fast....YUM!
If you make the pasta in advance and rewarm in the microwave this dinner goes together in about 10 minutes flat!I buy organic arugula in a package in the grocery and use half as it comes in 5 ounce packages.
