1/3 cup broccoli florets
nonstick cooking spray
1/4 cup onions, minced
1 zucchini, sliced thinly
1/4 cup green beans, chopped to 1/2" long pieces
1/3 cup red peppers, chopped
1/3 cup corn (off the cob)
1/4 cup fresh basil, minced
1 teaspoon black pepper
red pepper, to taste, optional
salt, to taste
cooked angel hair pasta, to serve
1. Boil water. Add broccoli florets to the water for about 45 seconds to 1 minute (do not let them get soft). Drain the broccoli. Spray a skillet with nonstick spray.
2. Add onion to the skillet over medium-high heat; stir often. Add zucchini to the skillet, then green beans. Add the red peppers and broccoli.
3. Add the corn, and stir all of this constantly until all the veggies are firm (not soft), but cooked. Add basil, peppers, and salt. Turn off the heat. Serve over cooked pasta.
