Pasta Soup with Herbed Lentils

What you need: 

1 large onion
non stick cooking spray
4 cups veggie stock
1 cup water
1/2 cup dried lentils
1/2 teaspoon dried oregano
1/4 teaspoon dried sage
1/2 teaspoon dried coriander
1 package frozen spinach, thawed
1 cup canned crushed tomatoes
1/2 cup acini de pepe or orzo
salt and pepper

What you do: 

Saute the onion in a pot until soft but not brown. Add the water and the stock and bring to a boil. Add the lentils, sage, oregano and coriander. Cover and simmer until the lentils are almost tender, about 20 minutes.
Add the tomatoes and bring back to a boil. At the pasta and the spinach. Heat for 10 minutes. Add salt and pepper to taste.
This is a wonderful filling meal for a hot night.

SO HOW'D IT GO?

Made this soup and it's very good. I didn't use veggie broth, just water since the lentils sorta make their own. I also added some mushrooms. I'll be adding this one to my fall/winter menus. Thanks!

This sounds good. I had just logged in to look for a new lentil recipe for dinner tonight, and this was the first recipe I saw. Can't wait to try it!

I think this will be on the dinner menu this week!  I'll probably use quinoa instead of pasta (we're gluten-free), but it sounds so darn yummy.  Thank you!

I would love to hear how it works out with quinoa since I have not had any success with quinoa but would like to add to my diet.  This might actually work!  I bet rice would work too.  Let me know how long you end up cooking, etc.

Well, first of all, I should say that this "Soup" may not look beautiful but it tasted very good.  It was far thicker than I expected considering all the liquids in it.  I would consider it more of a stew than soup, especially when reheated the next.  I used red lentils so it cooked much faster then suggested and I used some homemade tomato sauce instead of diced tomatoes.  It made a boat-load, far more then 4 servings, maybe 6-8 bowls instead.  My 11 year old said it was her new favorite food-even with the spinach in it!!!!!
