Pea Soup

What you need: 

5 cups water
2 cups yellow split peas
4 large garlic cloves
3/4 cups chopped onion
3/4 cup sliced carrots
3/4 cup sliced celery
1 cup chopped potatoes
1 cup chopped turnip
2 teaspoon thyme
1 teaspoon salt, 1/8 teaspoon pepper
1 teaspoon cider vinegar, 1/4 cup chopped parsley

What you do: 

Bring water to boil, and add peas. Bring to boil again. Lower heat and simmer covered losely. Cook stirring occasionally for an hour unti peas are tender. Meanwhile sauté garlic and onions until tender and add carrots, celery and thyme. Add sautéd veggies and potatoes and turnips to the peas and continue to simmer adding salt, vinegar, pepper and parsley. Cook 30 minutes more, covered, stirring occasionally until veggies are soft and peas dissolved.
