Peach Pie

What you need: 

1 tablespoon flour
3/4 cup vegan sour cream
1/2 cup sugar
1/3 cup flour
1 tablespoon almond extract
4 cups peaches, halved or diced
1/4 cup brown sugar (optional)
9" pie crust

What you do: 

Preheat oven to 425 degrees Fahrenheit.
Make a 9" pie crust and put in pie plate. Sprinkle crust with 1 tablespoon flour.
Mix together sour cream, flour, sugar, and almond extract. Stir in peaches (drain if using canned). Pour peach/sour cream mixture into unbaked pie crust and sprinkle brown sugar over top (i used about 1-2 tablespoon compared to the 1/4 cup, doesn't seem to matter that much).
Bake at 425 degrees for 20 minutes, then lower temp to 350 degrees and continue baking for 35 minutes.
This recipe might sound weird but it is soooooo good!
Source of recipe: I got this recipe from my mother-in-law. I was skeptical at first when she made it, but it's really yummy.

SO HOW'D IT GO?

Wow, this is amazing, well I'm assuming from licking the bowl clean it is, it's in the oven, but it looks gorgeous, and smells oh so good! i can't wait for the timer to go off :)

I used a container of vanilla soy yogurt in place of the sour cream.  I used a little less sugar - about 1/3 of a cup - since the soy yogurt had plenty of sugar in it.  I also used half white/half brown for the sugar.  The almond extract made the pie extra yummy.  And it was so easy to make.
