Peanut Butter Blackberry Thumbprints

What you need: 

1 cup creamy peanut butter
1/2 cup applesauce
3/4 cup brown sugar
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 (12 ounce) jar blackberry jam

What you do: 

1. Preheat oven 350 degrees F and grease a cookie sheet. Mix peanut butter, applesauce, and brown sugar in small bowl.
2. In another bowl, mix flour, baking powder, and salt. Stir in peanut butter mixture into dry ingredients until smooth.
3. Take rounded spoonfuls of cookie dough, and place onto sheet. Make a thumbprint in the center of each cookie, and place a teaspoon of jam into each well. Bake for 10 minutes.

SO HOW'D IT GO?

I just made these...very easy, simple and delicious...my meatatarian boyfriend loves them!! I will definitely make these again...thanks for this great simple recipe!!

Didn't change a thing when I made these and....they were good. They didn't blow me away, but they were like a PB&J sandwich as a cookie, and there ain't nothing wrong with that! They sat well at room temp for several days, and as long as you shape the dough balls well, I didn't have any trouble with the jam overflowing the indentation I made for it and making a mess on the cookie sheet.

For only having seven ingredients, YUM!
