Peanut Butter Cookies with a KICK!!!

What you need: 

1/2 cup vegan margarine
2 tablespoons flax oil
1/2 cup sugar
1/2 cup brown sugar
3/4 cup peanut butter
1 tablespoon vanilla
1 cup flour
1/2 cup oats
1/4 cup wheat bran
1/4 cup wheat germ
2 tablespoons baking soda

What you do: 

Preheat oven to 375 F.
Combine margarine, oil & sugars until blended. Then, add in the peanut butter and vanilla.
In another box mix all the dry ingredients, then add them to the wet mixture and mix thoroughly.
Roll into balls and press down in an "X" pattern with a fork on a cookie sheet.
Bake for 10 minutes.
Enjoy with a cup of hot tea or a cold glass of soy milk!!!

SO HOW'D IT GO?

Two tablespoons of baking soda must be a typo.  I think two teaspoons might work better -- or maybe leave it out altogether.  My cookies didn't rise much and were very salty from the baking soda.  My 3-year-old couldn't finish a cookie and my normally voracious husband only had one.  I'm not ready to give up on this recipe yet ... I love peanut butter with oatmeal ... but it's not quite right as it's written.

these tasted alright, but didn't rise at all. i'm not one for flat cookies. they were good though!
