Peanut Butter Cups

What you need: 

1-1/2 cups vegan chocolate chips
1 cup peanut butter, reduced fat and creamy
1/4 teaspoon salt
1/2 cup powdered sugar

What you do: 

1. Cut the top half of the muffin cups to where they are about half the original height for 12 paper muffin cups.
2. Microwave the chocolate chips for about 2 minutes at 50% power in a glass or microwaveable bowl. Stir until creamy, you might need to microwave them a little more. Make sure you do not overcook them. Using a spoon or new paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides. Place the coated muffin cups in the freezer until the chocolate hardens.
3. In a bowl, combine the peanut butter and salt, then fold in the powdered vegan sugar. Microwave the mixture for 1 minute. Stir and allow to cool.
4. Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion.
5. Place the cups in the freezer and wait an hour (or as long as you can).

I think I seriously screwed these up. I tried melting the choc chips in the microwave which was a bad idea.  They never got creamy, even after I tried added a little margarine as suggested. 

Hey akaconfused! I had similar trouble on my first batch. How fresh were your chips? I used the chips I had in the back of my pantry and they wouldn't melt at all in the microwave. I also added the the margerine and they never got creamy. When I went out and bought a new batch, I thought I'd try again. It worked perfectly! You might try a new, fresh batch of chips. Or maybe even a different brand. If all else fails, try melting in a double boiler. It's definitely worth it!

Yum!  I added an extra 1/4 cup of sugar (I used powdered sugar) for a little more sweetness and to solidify, since I didn't feel like going through the whole cupcake-wrapper painting thing--I just made little squares from the "dough" and dipped them in the chocolate.  I also added about a 1/2 tsp vanilla to the pb mixture for extra yum.  I followed veganlily's suggestion and added a little margarine to the chocolate, and that made for good dipping texture.  I'm very happy to have found this recipe!

amazing.  i added a bit of soy garden butter to the chocolate to keep it smooth and shiny.  i just ate a half of one.. saving the other half for tomorrow.  i'm proud of my self control.

I think I seriously screwed these up. First of all, the directions aren't very clear and although it should have been plainly obviously to me to save half the chocolate for last, I melted it all at first and decided to just put chocolate on the bottom only.  I tried melting the choc chips in the microwave which was a bad idea.  They never got creamy, even after I tried added a little margarine as suggested.  I then placed this on the stovetop with a bit of soymilk and it finally melted.  When the time came to add the peanut butter, I tried again in the microwave, which again did not work.  I tried putting this on the stovetop with a bit of soymilk again and that REALLY didn't work.  I finally just scopped a little pb onto the top of each and smooshed it around until it covered it as good as it could at that point.  I just tasted one and it tasted delicious (although a bit margariney due to my attempts to fix it), but not exactly presentable.  Maybe if I add another layer of chocolate on top so you can't see the pb. I'll definitely try this again.

These are so much fun to play around with.

I found some frozen mixed berries in my freezer and decided to make some peanut butter and jelly ones. I just threw the berries in a pot and cooked over medium-low heat for a bit and added some sugar. Although the 'jelly' never set they were still really good.
And on the tops of the regular peanut butter ones I added a sprinkle of cayenne pepper or peppermint extract after freezing.

Next time I make these I'm going to try some other combinations

This recipe was great! I melted the chocolate and peanut butter in their own double boilers. Fantastic recipe!

Do not use splenda or any fake sweetener! It is poison and I am not exaggerating at all. If you do use it, at least do proper research first so that you're informed. Look for sources othvver than those that make it, as they are biased. BE INFORMED!

I totally agree, being a bit of a conspiracy lover I have heard about Splenda and other artificial sweeteners. They are totally dodgy, I'll never touch the stuff.
