Peanut Butter Cups

What you need: 

1-1/2 cups vegan chocolate chips
1 cup peanut butter, reduced fat and creamy
1/4 teaspoon salt
1/2 cup powdered sugar

What you do: 

1. Cut the top half of the muffin cups to where they are about half the original height for 12 paper muffin cups.
2. Microwave the chocolate chips for about 2 minutes at 50% power in a glass or microwaveable bowl. Stir until creamy, you might need to microwave them a little more. Make sure you do not overcook them. Using a spoon or new paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides. Place the coated muffin cups in the freezer until the chocolate hardens.
3. In a bowl, combine the peanut butter and salt, then fold in the powdered vegan sugar. Microwave the mixture for 1 minute. Stir and allow to cool.
4. Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion.
5. Place the cups in the freezer and wait an hour (or as long as you can).

SO HOW'D IT GO?

So awesome!
I kinda jacked up the bottom chocolate because I used old chips and they didn't melt well, the the tops ended up looking perfect.....so delicious....I had leftovers so I made a little tray of bars too - I think those were my favorite!

FABULOUS!  However, I used soy nut butter instead!  I added just a couple drops of Agave instead of the sugar.  They were SO delish. These will be made...many times.

These are so rich......

I used agave instead of powdered sugar, gave the peanut butter a nice smooth texture. The vegan chocolate chips i used are extreamly rich, probably why you can only eat one of these things :)

I made like 16 of these........

YUMMM!!!! I make these all the time in my dorm room! I also recommend using just a smidge of vegan margarine; it really helps! I want to try the silicone cupcake liners, but I don't know if they are vegan! Does anybody know?

These were pretty good. Though I feel like there is wayyyy too much sugar in them. Next time I'll only add a tiny bit. I also wound up with lots of extra peanut butter mix than chocolate, and needed extra chocolate at the end. (maybe I just ate too much chocolate in the process, hah.)

these are so addictive!  i've made these a few times and they are stellar each time.  omnivores them them too.
i can't have them sitting around without me eating them.. so i gain a pound or two everytime ; )

what chocolate chips you use though, have a pretty big impact on the taste. the first few times i used "selection" brand semi-sweet and the other time i used "president's choice" and they were better the first time. it's so hard finding a yummy semi-sweet chocolate chip around here.  i guess selection will have to do.  shame because even those these were great for me , they could be even better

Love love love love love these. I've made them several times. Oh so delicious. I have always used paper muffin cups, cut down. But my mother gave me silicon muffin cups, and I have some small ones, with the ridges, but just reese's peanut butter cups.. They worked out so great! My roommate said she loved them with those, because she said she was tired of eating paper with her chocolate, because apparently she always eats a little paper with them, lol.
I like the granulated sugar, because it just tastes like homemade. YUMMY!

I don't know if I just don't know how to program my microwave, but when I tried to melt the chocolate it just ended up burning into a sad smelly mess. I ended up using a makeshift double boiler on the stovetop.

These are painfully simple, ingredients-wise, but boy are they messy! I thought it'd be a piece of cake, but I ended up trying to coat the cups just right for a good hour.

Oh, and obviously they taste AMAZING.

I've made these two times now, the first time it was extremely difficult to get the thick melted chocolate over the peanut butter (especially since it was warm). The second time, I added canola oil to the chocolate, that thinned it out and made the chocolate nice and soft! I also didn't microwave the peanut butter, so it didn't melt the chocolate and slide around. Everyone loved them!
