Peanut Butter Cups

What you need: 

1-1/2 cups vegan chocolate chips
1 cup peanut butter, reduced fat and creamy
1/4 teaspoon salt
1/2 cup powdered sugar

What you do: 

1. Cut the top half of the muffin cups to where they are about half the original height for 12 paper muffin cups.
2. Microwave the chocolate chips for about 2 minutes at 50% power in a glass or microwaveable bowl. Stir until creamy, you might need to microwave them a little more. Make sure you do not overcook them. Using a spoon or new paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides. Place the coated muffin cups in the freezer until the chocolate hardens.
3. In a bowl, combine the peanut butter and salt, then fold in the powdered vegan sugar. Microwave the mixture for 1 minute. Stir and allow to cool.
4. Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion.
5. Place the cups in the freezer and wait an hour (or as long as you can).

My sister makes these all the time and they are AWESOME!  Total peanut-butter-chocolate perfection!

Once, as a joke, she made a "special" cup for our little sister... it had a vegan hot dog cut up inside it, instead of peanut butter.  Hahahaha, so funny.  If I can figure out how to put a picture in a comment, I'll add it.

These were so good!
We didn't have any muffin papers So  we just made them in the Metal cupcake pan & kept them in the freezer. When we wanted one we just held the pan over a pot of boiling water & popped the PBC out! These will be made many times in our house! Thanks

I just made the no-bake chocolate peanut butter oat cookies from this site and then going through here I found this peanut butter cup recipe. I realized I had all the stuff left over from the other recipe to make this one so I couldn't wait to try it out.

I used crunchy peanut butter instead because that is what I had but they turned out amazing. I usually prefer crunchy anyway. :) I also used vegan chocolate chips and melted them on super low in a sauce pan instead of microwaving them.

I do need to get some sort of brush so I can make them neater and easier to eat. I am sure I will be making this one again and again.

;)b I made these tonight, just ate one. They're great!!! My roomate warned me that he might eat them all, lol. It was a little tricky doing them with the spoon but I got a hang of it. And definitely put them in the freezer after you put the peanut butter in. It's so much easier to put the top layer of chocolate on when the peanut butter is hard.

These were so good that I ended up making them every night for a week (I work out like a maniac so I allow myself treats) I eventually made myself sick off them LOL. Very good, although I don't think I'll be making them again for awhile since I goofed and ate too many

Simply put, these are divine!  The recipe works like a charm.  For the most part, I followed the instructions (melted the chocolate in the microwave), but I did add a little Earth Balance to the chocolate to help thin it.  I had to spread the top layer of chocolate on AFTER freezing the peanut butter (since the pb was so gooey), but otherwise it was a cinch to make.  One of these is more than enough for a dessert; they're way rich!  I can't wait to share with friends tomorrow.... or not!  ;)

I'm curious ... What kind of chocolate did everybody use? Mine worked great, but I'm not opposed to trying new chocolatey flavors!

I used the same chocolate as you, except I add a bit of salt and powdered sugar to it after I melt it since many of my friends complained it was a bit too bitter.  however coming from germany, I prefer it with less sugar and salt.
