Peanut Butter Fudge Cookies

What you need: 

1/2 cup shortening
1 cup peanut butter
1 cup sugar
1 cup brown sugar
1/2 teaspoon baking soda
1 cup apple sauce
1 teaspoon vanilla
2 cups flour
3 tablespoon cocoa powder
1 tablespoon vegetable oil

What you do: 

Mix all ingredients together.
If dough is too dry add more peanut butter.
Drop balls on to cookie sheet. Bake at 375 degrees for 11-13 min.

SO HOW'D IT GO?

The cookies didn't turn out as well as I expected based on the other reviews here, though I'm pretty sure that's because I tried subbing some mashed banana for the applesauce.  If you're going to try that, be sure to add a little extra water and sugar.  I didn't add any extra sugar and my cookies are therefore rather bland.  I did add chocolate chips and luckily those helped make them a little more sweet.  :-\

Hmm...I have mixed feelings about these cookies. The dough is very yummy and addictive, but the cookies are only so-so; not nearly as fudgy as they should be. I think this is due to the full cup of applesauce, which makes them almost bread-like. Next time I might use less applesauce and more Earth Balance (which I subbed for the shortening). I added chocolate chips, too, which is what I think saved them. However, I will say that my boyfriend likes them and so did some non-vegans, so maybe it is just me -- I think I am spoiled by the "Awesome Chocolate Cookies" recipe, which is orgasmically good. Well, I will work with this recipe and post my results!
