Pear Pie

What you need: 

4 cup peeled chopped pears (I used ripe Barlett)
1/3 cup maple syrup or agave
2 tablespoons of cornstarch
5 teaspoons of lime juice
1/3 to 1/2 cup coarsely chopped candied ginger
2 9" vegan pie crusts (homemade/frozen etc)
2 to 3 Tablespoons soy milk *
2 tablespoons granulated sugar*
dash nutmeg*
dash cinnamon*
dash cloves*
dash cardamom*

What you do: 

Mix sweetener, cornstarch, and lime juice. Add chopped pears and ginger tossing to coat well. Pour into pie crust. Top with second crust or create lattice top with second crust. Cut slits or shapes if using whole top crust.
Optional:
Brush top of pie or lattice with soymilk mix sugar and spices together and sprinkle onto the moistened top crust. Bake 400 degrees for 35 to 45 minutes until crust is golden.
* I usually cover the edge of the pie for the first 30 minutes of cooking. I then uncover it and it does not get too brown around the edge.
