Pecan Rolls

What you need: 

2 cups pecans
1 cup pitted dates
1 tablespoon orange rind
1 cup coconut (optional)

What you do: 

Put pecans into a processor and process until fully chopped. Add dates and rind and process until it forms a ball, adding water if needed. Or Braggs Liquid Aminos to tone the sweetness down. Roll into a log and slice and eat. Store in the refrigerater. If preferred roll the pecan logg in the shredded coconut. Or you can roll it in carob for a chocolate flavor.

SO HOW'D IT GO?

these were pretty cool. i just bought some medjool dates to experiment with and this was really easy.

i used a mini hand chopper for the nuts (i used pecans) and the dates i made a small slit on the long side and the "pit" is actually really small, like an almond, and just cut it up with a knife

i only had lemons so i used zest from that and no coconut (had none, will try it next with it!)

they kinda look like almond roca bars (i guess i shaped mine like that :D ) and are lightly sweet and chewy but not too chewy.
