Pineapple Lentils

What you need: 

3 tablespoons oil
1 onion, chopped
1 teaspoon salt
1 teaspoon pepper, ground
3 garlic cloves, minced
2 cups dry lentils
3 cups water
4 oz crushed pineapple

What you do: 

Pick over lentils and soak in water for at least 30 minutes.
Heat oil and saute onion, salt and pepper until the onion has browned.
Drain lentils and add to the skillet with garlic. Cook for 2 minutes.
Pour over water, cover and simmer for 30-45 minutes until the lentils are done.
Stir in pineapple and serve.

SO HOW'D IT GO?

I agree, this is not crazy! Beans & fruit go together well (ie pineapple & kidney beans or baked brown beans)... I guess because they are "the musical fruit...???!!! ;D

After seeing this gorgeous photo, and realizing that I had all the ingredients on hand, I decided I had to make this.  Right Now.  I added some peeled and grated fresh ginger in with the garlic.  Yum!  This one's going in my recipe box.  Thanks!
