Pineapple Mint Salad Dressing

What you need: 

1/2 tablespoon dried mint leaves
3 tablespoons red wine vinegar
1/2 cup plus 1 tablespoon olive oil
3 tablespoons pineapple, crushed
1 teaspoon lemon juice
Salt and pepper, to taste

What you do: 

I use a clean small jam jar for my dressing mix and it is perfect for blending the mixture.
1) Put the mint in a jar with a pinch of salt and pepper. Add vinegar and oil. Crush the pineapple chunks with a spoon gently to release some juice. Add to jar along with lemon juice.
2) Close the lid and give a good shake for about 30 seconds. Taste the mixture for balance and add mint, salt, or pepper as needed. Let this sit overnight for the best flavor to allow the ingredients to break down and saturate the dressing. Enjoy.
