Pineapple Reds

What you need: 

1 15 oz can kidney beans, drained well
3/4 cup diced pineapple chunks
2 green onions, finely chopped
1/4 teaspoon garlic powder
1 small tomato, diced
1/2 teaspoon chili powder
1/4 teaspoon cinnamon

What you do: 

In a pot, combine all ingredients. Cover and cook on medium heat approximately 5-8 minutes, stirring several times.
The mixture will become more liquidy as it cooks.
Cooked pineapple is simply divine!

SO HOW'D IT GO?

Made this last night liked it but think it would be even better without the cinnamon and with curry powder and cumin, also added collards which were pretty delicious. I did Love how quick and easy it was to prepare, great when you don't have a lot of time to cook.

weird recipe, but not bad. (I'd never considered pineapple and beans.) I like to throw in a sweet potato (steamed in advance), some collard greens, and an extra tomato. once I added maybe 1/4 cup tomato paste and I don't recommend that. gross. I managed to save it with extra pineapple juice, but then it was too sweet. it's good over rice or quinoa or some grain to mellow out the pineapple's sweetness. I've eaten it plain, too.
