Potato and Pinto Tacos

What you need: 

1 tablespoon olive oil
3-4 small potatoes, diced 1/4"
1/4 cup onion, diced
1 (15 ounce) can pinto beans
1 (4 ounce) can diced green chilies
1/2 tablespoon chili powder
1/2 tablespoon cumin
4 taco shells or tortillas
1/2 cup lettuce, chopped
1/2 cup tomatoes, diced
1 cup fresh guacamole
salsa, to taste

What you do: 

1. Cook onion and potatoes in a medium sized pan in about 1 tablespoon olive oil.
2. After 4 minutes, add beans, diced chilies, cumin and chili powder. Saute for about 10 minutes, until potatoes are soft.
3. Once potato/bean mix is done, fill taco shells/tortillas with the bean/potato mix, lettuce, tomatoes, guacamole and salsa.

SO HOW'D IT GO?

Hubby & I made this last night for dinner.  We used a fresh jalapeno instead of the canned chiles.  It was really great!  It is definitely going on our list of "KEEPER" recipes.

Just made this for dinner.  It was great!  I added black beans and cilantro.  And also used dairy free sour cream and cheese.  I am just starting out trying to cut out meats and dairy and this recipe was simple and tasty!

This was GREAT! My potatoes definitely took longer than 10 minutes to cook, so next time I think I'll parboil them before combining them with the beans and seasonings.  We actually ate these in burrito form and my husband RAVED about it.  Super hearty- I'll make these again and soon.  Thank you for the delicious recipe.
