Potato Candy

What you need: 

1 small potato
1 pound sugar
1 small bag shredded coconut
2 squares bitter chocolate
chopped walnuts (optional)

What you do: 

Peel and quarter potato. Boil then mash it. Add vegan sugar a little at a time and mix well. Stir in shredded coconut and spread in a pie plate or 8 x 8 pan.
Melt chocolate squares and spread over top of mixture in pan. Add chopped walnuts to the top if you like. Let chocolate harden and cut into squares.
This comes out tasting sort of like mounds bars!

SO HOW'D IT GO?

weird, but good.  I used sweet potato and ended up needing six squares of semisweet baking chocolate (melted with soymilk) to cover the 9x9 pan I put it in.  next time I'll add an egg replacer or two, as my only complaint was that the coconut part is crumbly.  had to keep it in the freezer/fridge all the time.

I took it to a dessert bake-off contest with an autumn theme and was hoping to win Most Creative (by using someone else's recipe) because I'd never heard of this before and vegetables in candy are strange and surprising... but I didn't win.  some boring ol' non-vegan pumpkin bars did.  LAME.  still, everyone gobbled this up.  I myself ate so much I felt sick, but it was worth it.
