Potato Lentil Curry Soup

What you need: 

1 tablespoon olive oil
1/2 onion, diced
2 cloves garlic, minced
1 carrot, peeled and cut into small rounds
1 small potato, peeled and diced into smallish pieces
1 (14 ounce) can vegetable broth
1 tablespoon tomato paste
1/2 tablespoon red curry paste
2 teaspoons cumin
1/3 cup lentils

What you do: 

1. Put olive oil into a small pot and heat on medium-low. Add onion and garlic to the heated oil; cook for 5 minutes until onions are soft and translucent.
2. Add the rest of the ingredients. Add 1/2 cup water, stir, and bring to a boil.
3. Cover and simmer for 20-30 minutes until potatoes, lentils and carrots are soft. Pour (or ladle) into two bowls and enjoy!

I love this recipe.  i cook it for dinner all the time, and it is especially awesome when im sick with lots of extra garlic and red pepper flakes.  quick easy and cheap!  thanks so much!
