Potato Soup

What you need: 

4 potatoes (more if you like to slice potatoes), sliced thinly
4 leeks, cleaned, washe'd and sliced, mostly white parts but some of the green is ok.
vegetable broth. I buy some in a jar in the HFS that is very good.
About 12 cups of water with enough of the veggie broth for the 12 cups.
1 onion, sliced

What you do: 

Put the onions, leeks and potatoes in a large pan and cover with the water and veggie broth. I don't measure and I just think it is about 12 cups but it could be more. Cook until tender. Season to taste and put either in the blender by batches or the food processor. I have a Cuisinart and it works fine but I prefer the blender. Be careful. Put just about a cup in the blender to begin, whirl slowly and the faster. Add more of the potato mixture and again start slow. Very hot liquids will go over the top if you start off too fast a speed.
