Potato Spread

What you need: 

4 potatoes, peeled
approximately 14 oz. vegetable broth
salt and pepper to taste

What you do: 

Cut potatoes into small bite-size chunks. Place in a pot with the vegetable broth. Add water until the potato chunks are completely covered. Boil until potatoes are soft and most of the water/broth is cooked down.
Remove a few chunks of potato and either mash or blend the remaining potatoes and water/broth to a smooth consistency.
Add salt and pepper to taste, as well as the set-aside potato chunks.
Good for toast, sandwiches, etc...
