Potato Tofu Scramble

What you need: 

1 potato, sliced thinly
2/5 block of firm tofu, drained and squeezed
1/2 cup of sliced pepper (green, red or both)
1/4 diced onion
1/4 cup salsa
1/4 cup soy cheese (optional)
1 tablespoon chile powder (or to taste)
cooking spray or oil for frying
a couple tablespoons of veggie broth (if using cooking spray)

What you do: 

Heat pan to medium and spray with cooking spray or add oil.
Add potatoes and chili powder and saute with cover on until potatoes are about halfway done, about 10 minutes.
Add pepper, onions and crumbled tofu and mix together thoroughly.
Continue sauteing until potatoes are tender, another 5 to 10 minutes.
If you use cooking spray, you may need to add veggie broth to keep potatoes from sticking to pan.
Add salsa and cheese (if using), mix together until the scramble is hot and cheese is melted.
Add salt and pepper to taste.
Simple, but really yummy and filling!
Measurements are approximate - you can of course add more vegetables and spices to taste
