Praline Sweet Potato Casserole

What you need: 

[u]Sweet Potato Casserole[/u]:
4 cups cooked, mashed sweet potatoes or yams
1/3 cup orange juice
1/4 cup brown sugar
3 tablespoons melted vegan margarine
2 tablespoons brandy
1 teaspoon grated orange peel, or more to taste
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger or 1 tablespoon fresh grated
1/4 teaspoon allspice
1/8 teaspoon pepper [u]Praline Topping[/u]:
1/3 cup brown sugar
1/2 cup chopped pecans
1/2 teaspoon cinnamon

What you do: 

1. Sweet Potato Casserole: In a bowl, combine all casserole ingredients and mix well with an electric beater.
2. Pour into a well-greased 2-quart shallow casserole.
3. Praline Topping: In another bowl, thoroughly combine all topping ingredients. Evenly sprinkle topping over casserole.
4. Bake at 350 degrees Fahrenheit for 30 minutes

SO HOW'D IT GO?

The flavor is amazing, but it is VERY sweet and rich.  I am going to try with less sugar next time.  Also, I added some melted Earth Balance to the praline topping, which turned out fantastic!

I took this to Thanksgiving dinner with my omnivorous extended family, and they were all rushing up to me,  gushing about how good it was, quizzing me on ingredients, and inflating my ego to the size of one of those giant parade balloons.

I don't own a potato masher,  so after roughly mashing the yams with a serving fork, I used a hand blender to make the yams extra creamy (like buttah!) and added some margarine to the praline topping. I was just nomming on the leftovers, and this dish tastes delicious cold, too.

Definitely going on my greatest hits.

I used Southern Comfort instead of Brandy., and I made ahead of time so all those good flavors could just meld together  ;)b

I made this Sunday for our end of the summer party and it was a total hit! I snuck in a 1/2 cup of brown sugar and boy was it yummy!

Wow! :D Made this for T-giving and it was a hit for veggie and non-veggie people alike! The orange flavor is brilliant. Very rich, so take small portions!

i thought i had my mind made up about which sweet potato dish i was going to use for thanksgiving, but now i must give this a try!
