Protein-Packed Rice

What you need: 

8 oz. Great Northern Beans
1 8 oz. can peas
2 tablespoons margarine
1 cup long-grain rice
1. cup water
Salt and pepper to taste

What you do: 

Bring water to a boil. Add rice and margarine; stir, boiling for 1 minute. Add beans and peas and boil for one minute more. Season to taste. Simmer until water is absorbed.

SO HOW'D IT GO?

Super easy and super fantastic! I cooked the beans and rice together for 40 minutes in veggie broth and threw in the peas for the last five. We gobbled this up but if I were going to add anything, I'd add some mushrooms.
