Provencal Zucchini

What you need: 

2 medium zucchini, thinly sliced
2 medium tomatoes, thinly sliced
1 lemon, juice and pulp
3 sprigs fresh rosemary (about 1/2 teaspoon dry)
4 tablespoons olive oil
salt and pepper, to taste

What you do: 

1. Preheat oven to 350ºFahrenheit. Place vegetables in a baking dish in alternate layers.
2. Add lemon juice and pulp; season and sprinkle with rosemary and olive oil.
3. Season, to taste. Bake for approximately 1 hour.
Good hot or cold; you can chill this in the fridge in summer for a refreshing salad-type meal.

SO HOW'D IT GO?

Not bad!  The flavor was very light and mild - not a bad thing at all but I usually go pretty bold on flavor so this was something different to me.

Things I would have changed about the way mine turned out:  I definitely would have sliced the veggies thinner (the recipe does call for thin slices, after all....HEED its request! ;-).

Also if you do not remove the seeds from your tomatoes, then you may want to go easy on the oil lest you end up with soupy liquid like I did.  I may use pre-diced tomatoes next time for that reason.  But, if you REMOVE your seeds and slice them fairly thin, you shouldn't go wrong. 

Finally, I found it needed a little extra salt at the end, even after it had been baked with plenty of salt -- so it might be a good idea to add your salt & pepper afterwards. (Definitely bake WITH the rosemary, though -- it adds a nice touch!!)

Final thoughts . . . I will be playing around with this recipe again in the future.  It's a nice, light dish great for summer weather and I agree it would probably taste good cooled - although I did not get as far as storing the leftovers in the fridge cause I ATE IT ALL!! So it goes to show that this is a pretty good recipe.  :)

here's what i did:
* baked the whole thing in microwawe on 100% for 8 minutes
* tomatoes should be a lot thicker than i cut them
* used italian herbs for rosemary
* should have used more tomatoes and less lemon, because my tomatoes were pretty sour and the lemon was too much
i think next time i'm adding garlic instead of lemon and maybe cubing everything is a good idea to make it layer better.
