Puckery Pomegranate Seitan
2 tablespoons oil
1 pound seitan, chopped
1 large onion, sliced
2 cloves garlic, minced
salt and pepper to taste
4 tablespoon pomegranate molasses
2/3 cup vegetable stock
1/4 cup walnuts
dash of sugar
1. Fry seitan for about five minutes or until it starts to brown on both sides. Remove from pan and keep in warm place.
2. Add onions, garlic, pepper, and salt and sauté until onion softens.
3. Add pomegranate molasses, stock, walnuts and sugar and bring to simmer. Add seitan back to pan and coat with sauce. Simmer until the sauce thickens. Serve.
