Pumpkin Muffins

What you need: 

1 cup canned pumpkin puree
3/4 cup organic sugar or agave
1/2 cup non-dairy milk
1/3 cup vegetable oil
1 mashed banana
3-1/2 cup whole wheat flour
4 teaspoons baking powder
2 teaspoons pumpkin pie spice
1 teaspoon salt

Topping:
3/4 cup brown sugar, packed
3/4 cup chopped nuts or oats
1 teaspoon pumpkin pie spice

What you do: 

1) Mix pumpkin, sugar, milk, oil, and banana until well blended. Set aside.
2) In a separate mixing bowl combine dry ingredients thoroughly. Fold dry ingredients into wet ingredients until fully blended together.
3) In separate bowl, mix together topping ingredients.
4) Spoon batter into greased muffin tin. With teaspoon, spoon topping mix on top of batter and bake at 375 degrees F for 20 -25 minutes, or until toothpick comes out clean.
