Pumpkin Pancakes

What you need: 

1 cup whole wheat flour
1 cup all purpose flour
1/2 cup soy flour
1 teaspoon baking powder
pinch salt
1 1/2 teaspoons pumkpin pie spice
1/2 cup soft tofu
1 banana
2/3 cup pumpkin
1/2 cup applesauce
1/4 cup vegetable oil
1 1/2 cups nondairy milk (I use soy)
handful sunflower seeds
handful walnuts

What you do: 

1. Mix all dry ingredients together.
2. In a separate bowl, blend tofu, banana, pumpkin and applesauce together. Add oil and milk.
3. Stir into dry ingrediants and mix well. You might have to add more milk or water to the batter. Stir in seeds and nuts.
4. Cook in preheated pan or griddle until done.
These end up being quite dense and slow cooking, so it helps to make them into small fairly thin pancakes. Very yummy, though.

SO HOW'D IT GO?

Delicious!  Makes a large batch, so I'm going to cook them all up and pop them in the freezer for another day.  ;)b
