Pumpkin Pasta Sauce

What you need: 

1/2 a pumpkin
1 cube vegetable bouillon
water
mushrooms, to taste
1-2 teaspoons garlic, minced
olive oil or vegan butter

What you do: 

1. Remove pumpkin skin. Cut pumpkin into small pieces and boil until soft.
2. Puree the pumpkin with vegetable stock and a little water. This sauce is much better thick than watery, so it is better to add water later then puree the pumpkin with too much water.
3. Fry mushrooms with garlic and oil/ vegan butter. When the mushrooms are cooked, add to pureed pumpkin and let the sauce simmer for a few minutes, then pour over your favorite pasta.

I added salt, black pepper, and some ceyanne pepper.

My pumpkin was very bland and tasteless so I added a spoonful of pesto. Wowee! It sat up and took notice. A very nice combination, even without the pasta underneath. With the pasta, a hearty main meal.

;D ABSOLUTELY DELICIOUS!!! I added some white wine and spices, and  I am so happy with the way it turned out, I'm definitely making this again!
