Pumpkin Pie

What you need: 

3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon ginger
2 teaspoons cinnamon
1 (15 ounce) can pure pumpkin
2 teaspoons plain applesauce
1 cup nondairy milk (I use soy)
1 deep-dish pie shell

What you do: 

1. Preheat oven to 425 degrees F. Mix the sugar, salt, cinnamon and ginger in a small bowl. In separate bowl, mix the pumpkin and apple sauce.
2. Stir in the spice mixture and then gradually add the milk and blend together until mixture has thickened some.
3. Pour mixture into pie shell and bake for 15 minutes. Reduce temperature to 350 degrees F and bake for 40-50 minutes. Cool on wire rack for 2 hours and serve or refrigerate immediately.'

SO HOW'D IT GO?

I tried this recipe today and I think it is missing some sort of a thickener because the pie turned out runny. Other than that, the filling tasted good!

Added 2tbsp of cornstarch to the almond milk before I added it to the mix and I also used a real pumpkin instead of canned puree. It isn't firm like a traditional pumpkin pie but it's firm enough for me! I also cut into it really early though because it smelled SO good. AWESOME RECIPE!

This was my first attempt at baking a vegan pie, and I was a little skeptical at first that it would be runny. So, I used the same amounts of apple sauce and cornstarch as CJohnson. It turned out amazing! It made the whole house smell fantastic, and it tastes just like a traditional, non-vegan pumpkin pie. I can't wait to share it with my meat-eating family! Thank you, GrannieShawna, for posting this delicious recipe in time for Thanksgiving!  ;D

Thank you GrannieShaw for this very easy and yummy recipe!  I've made it twice now and took all the variations submitted into consideration.  It's AMAZING!  My family loves it and I've brought it to a friend's house for dessert where it was enjoyed even by those who said they didn't care for pumpkin pie!  Thanks so much.

I upped the applesauce to 1/3 cup and added 3 Tbsp cornstarch to the soymilk and whisked until it started to thicken before adding it to the pumpkin...It's going into my FAVORITE Recipes Box !!!  ;)b

This pie is absolutely amazing. I didn't change anything and it was perfect.

This is the oven right now and it smells SO GOOD! When mixing it up it seemed to be too runny so I added some more pumpkin puree. For the spices I just put in 3/4 teaspoon cinnamon and 1/2 teaspoon all spice. It's been in the oven about 50 mins. so far and it's still quite runny.  :-\ I'm hoping that it will cook properly. *crosses fingers*  :)

2-3 tabls of Cornstarch, it shoudl be ok :)

This is a very good pie.  I added a little  more spices.

I included 1/4 cup apple sauce (instead of 1 tsp) and some flour to make the consistency firmer. It worked beautifully!
