Pumpkin Pie Bites Cookies

What you need: 

2 cups oats
1 cup flour (I used a gluten free mix and that worked fine)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon cloves
1/2 teaspoon salt
1 cup sugar
2 tablespoons molasses
1/4 cup water or nondairy milk (I use soy)
1 (14 ounce) can pumpkin
1 teaspoon vanilla

What you do: 

1. Preheat oven to 350 degrees F, and grease a cookie sheet. Mix dry ingredients in bowl.
2. Mix the rest of the ingredients in another bowl. Add wet to dry and combine.
3. Drop the cookies by tablespoonful onto the sheet, and ake in the oven for 15 minutes.
Taste like little chunks of pumpkin pie... or muffin tops!!!

SO HOW'D IT GO?

These were really yummy, I had to tweak the recipe a little to fit the ingredients I had, I made half with chocolate chips and half without. At first I thought they were just so-so, but the more I ate the better they tasted, and when they were gone I found myself wanting more.

I made the gf version of these yesterday, and people tore through them. Even people without dietary restrictions. I figure that's a thumbs up!

These turned out like the perfect cookie-muffin.  I spread the batter unevenly over a greased cookie sheet and the sprinkled a streusel topping over the batter.  Yum!  I used double the vanilla, half the sugar, a tablespoon of stevia (powdered), a splash of maple syrup, a dash of both nutmeg and allspice, and coconut yogurt instead of the milk.  As hard as I try, I can never follow a recipe; it's too fun to splish and splash and dash and sprinkle.  :D  Thanks for the fun, scrumptious, and healthy recipe!

These are addicting!!! Very awesome. I added some semi sweet choco chips and used only 3/4 cup sugar. Thank you!

Batter was a bit moister than I thought it would be.  I added an extra 1/4 cup of oats.

The end result was moist, fluffy pumpkiny goodness.  Somewhere between cookie and muffin.

these were pretty good, and perfect for the season! i added 1/2 tbsp cocoa and 1/2 c. mini non-dairy chocolate chips. pumpkin + chocolate = AWESOME! thanks for the recipe.
