Pumpkin Pie Oatmeal

What you need: 

1 cup water
1/2 cup Oats
1/4 cup pumpkin puree
cinnamon
pumpkin pie spice
walnuts (optional)
3 teaspoon brown sugar

What you do: 

Boil water and add oats. Reduce heat and cook oatmeal until most of the water is absorbed. Mix in pureed pumpkin and sweeten to taste with brown sugar, cinnamon, and pumpkin pie spice (or nutmeg). Top with walnuts.

i added apple sauce, flax seed, maple syrup and cocoa powder. perfect!

Modified this recipe just a bit.  Used freshly mashed pumpkin instead of canned pumpkin, mashed a pear into the oats instead of adding brown sugar for sweetness, and drizzled a bit of almond butter on top along with the optional walnuts.  Made quite a hearty, harvest-y dish!

I LOVE pumpkin so this looks really good. However, I have the Libby's Pumpkin Pie Mix. Do you think that would work?

I actually think it would taste better. That stuff is presweetened, and I thought this recipe needed some more sugar.

I LOVE pumpkin so this looks really good. However, I have the Libby's Pumpkin Pie Mix. Do you think that would work?

I actually think it would taste better. That stuff is presweetened, and I thought this recipe needed some more sugar.

this was good, nothing amazing.  i added a dash of salt & bit of vanilla to give it some more flavor and used pecans instead of walnuts.  oh - and threw in some ground flaxseed, too.

I made this for my mom, and the brown sugar was an absolute must to balance out the pumpkin.

This was a welcome change to my usual breakfast, and super easy to make.  I found it was very good with apple sauce as suggested too.

I find that this tastes much better with a bit of applesauce blended into the combination, as it thins the consistency and adds flavor.  Speaking of which, cinnamon and cloves for spice are nice, but be careful not to add too much, especially if you're sticking to the original recipe, omitting my suggestion of applesauce in other words.
