Quick and Creamy Macaroni
1 -16 ounce package of pasta (I use shells or macaroni)
1 -12 ounce can tomatoes with diced peppers (I use Rotel)
1 cup raw cashews
1 - 12 ounce package silken tofu
spices, salt, pepper, garlic, whatever you want to add
soy milk (as needed)
1) Cook pasta according to directions. While the pasta cooks, prepare sauce.
2) In blender, grind cashews and then add tomatoes, tofu, a splash of soy milk and blend until creamy. Add more soymilk if needed. Season with salt, pepper, and other spices of your choice.
3) Stir sauce into pasta. You can simply eat it like this or bake til bubbly in oven at 325 for about 20 minutes.
