Quick and Easy Dal

What you need: 

1 cup red lentils ( masoor dal )
1 cup chopped cabbage
2 small or 1 medium tomato
1 hot green chilli pepper
1 teaspoon oil
1 teaspoon cumin seeds
1/4 teaspoon turmeric powder
some chopped cilantro for garnish
salt and lime juice to taste

What you do: 

Wash the lentils and set to cook with 2 cups water. Heat the oil in a pan. Add the cumin seeds and stir till they slightly darken in color. Add the chopped up hot pepper and cabbage. Saute these two ingredients and when slightly soft add the cooked and mashed lentils, turmeric powder, chopped up tomato and salt. Bring to a rolling boil and take off the heat. Add a squeeze of fresh lime and sprinkle the cilantro on top. Serve over hot rice. This is really easy and delicious ! A more watery version will do nicely as lentil soup.

SO HOW'D IT GO?

I was a little skeptical that this would be good, considering how few spices were involved. I'm glad I tried it! I did enhance the flavor a bit by cooking the lentils in veggie broth, and I also sprinkled in a few pinches of cayenne pepper and coriander to enhance the flavor. The fresh cilantro and lime juice were a lovely addition. Thanks!

Adding cabbage makes dal much tastier and adds its sweetness and texture, so I'm glad I found this recipe (and a similar one on a Persian food site), it was one of the best things I've eaten in a long time. I kinda tweaked the technique by cooking red lentils in the tomato/onion/serrano/garlic/ginger/cumin seed broth then adding a lot of shredded cabbage and more water halfway through and letting it all melt down into mushy dal heaven.
