Quick and Easy Sugar Cookies
1 tablespoon egg replacer (I use Ener-G Egg Replacer Powder)
1/4 cup water
1 cup granulated sugar, divided
2/3 cup canola oil
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
vegan margarine
1. Preheat oven to 350 degrees Fahrenheit. In a small bowl, combine your egg replacer and water; whisk very briskly until you get a foamy mixture.
2. In a bowl, combine your "egg" mixture, 3/4 cup sugar, oil, vanilla extract, almond extract; beat together with an electric mixer. Sift in your flour, baking powder and salt; beat until dough is well mixed.
3. Roll your dough into about 24 balls. Place 12 evenly spaced balls on a cookie sheet.
4. Pour 1/4 sugar on a plate. Dip a paper towel into your margarine and rub it on the outside bottom of a flat cup, then dip the cup into your sugar and use it to smash each dough ball until it is about 1/4 inch thick. Repeat for second tray of cookies.
5. Bake in oven for 8 to 10 minutes. Cool before serving.

SO HOW'D IT GO?
These were super fast and easy. I also cheated, left out the margarine step, rolled the balls in sugar and squished them onto the pan with my fingers. I also left out the almond extract because I didn't have any, but otherwise followed the recipe and they came out great!
These came out delicious. My 4 year old and 2.5 year old had a lot of fun helping me make these. Their favorite part was cutting out the shapes.
I didn't have almond extract so I substituted an additional tsp of vanilla extract. I also added the zest of one orange. These cookies have great flavor and a wonderful texture. It gets 3 thumbs up at our house. ;)b ;)b ;)b

When I made these, I had a to make a couple substitutions--didn't have all-purpose flour, so I used whole wheat pastry flour, which gave them a buscuit-y feel. I rolled them in crunchy sugar for the top, to add a little interest. These were pretty good--my roommate and I ate a lot of them in one sitting.
I'm totally out of groceries and so I've been searching through recipes to see what I can make and these cookies were among the few, so I made them again. They're quite possibly better than they were last time! I omitted the almond extract and used a total of 2 tbsp of vanilla extract. I also added some ginger, nutmeg, and cinnamon. I skipped the margarine and cup step again and just dipped the balls in sugar before squishing them on the pan with my fingers.
I'll admit, I'm not vegan. I made these cookies using 1 egg, but the dough was a little dry, so I added a 2nd egg. These turned out fantastic!!! I will make them again and again!! :)>>>
Give it the "old vegan try" (yes, I just made that up!) and use 5 Tbs of applesauce instead of those 2 eggs next time. And the applesauce will replace the 1/4 C water and 1 Tbs egg replacer that you most likely do not have or will not buy :D I bet you'll be surprised at how good they are without the cholesterol or the cost of the eggs!

These are pretty good. I halved the recipe and skipped the margarine. I just sprinkled some sugar on top. These tasted a little bit flour-y, but are perfect once dipped in some soymilk! Super quick & easy to make, so the title speaks the truth!
These are the best sugar cookies. I can't stop eating them. They remind me of the sugar cookies I got from the bakery as a kid.
I love these! I've got a cold this weekend and wanted to treat myself with something, and this was absolutely perfect. Just a few ingredients and easy enough that I didn't need to take a nap halfway through! ;)
I omitted the almond extract in mine (didn't have any) and subbed half of the oil for applesauce, which produced really nice cakey cookies. Sooooo goooood.
